Healthy Recipes for 2019

New Years is a time when many people choose to start focusing on being more healthy. I thought it would be fun to share with you a few of my family’s healthier kitchen options. <3

Stuffed Peppers (MaMaw Nina)

  • 6 large green, red, or yellow bell peppers
  • 1 lb. ground beef
  • 1 c. cooked rice
  • 1/8 tsp. garlic salt
  • 1 (15 oz) can tomato sauce
  • 3/4 c. shredded Mozzarella cheese
  • 2 Tbsp. chopped onion
  • 1 tsp. salt

*You could even use ground turkey or ground chicken to make this healthier.

Cut a thin slice from stem end of each pepper. Remove seeds and membranes; rinse peppers. Cook peppers in enough boiling water to cover for 5 minutes. Drain.

Cook and stir ground beef and onion in 10-inch skillet until beef is light brown. Drain. Stir in rice, salt, garlic salt, and 1 cup of the tomato sauce; heat through.

Stuff each pepper with beef mixture; stand upright in ungreased square 8x8x2 inch baking dish. Pour remaining sauce over peppers. Cover dish and bake in 350-degree oven for 45 minutes. Uncover and bake 15 minutes longer. Sprinkle with cheese.

Zucchini Medley (MaMaw Nina)

  • 5 zucchinis sliced 1/4 inch thin
  • 3 yellow onions sliced not too thin
  • 4 green bell peppers cut into pieces
  • 1 1/2 tsp. oregano crushed by fingers
  • 1 tsp. basil crushed by fingers
  • garlic powder to taste
  • 5-6 sprigs fresh parsley cut up
  • salt and pepper to taste

Saute in olive oil and fry at medium heat until tender.


Mamaw Shirley

Broccoli Salad (MaMaw Shirley)

  • 1 1/4 c. broccoli, chopped
  • 1 1/2 c. cauliflower, chopped
  • 1 can of chopped ripe olives
  • 2 bunches green onions, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 c. celery, chopped
  • 1 c. zucchini, chopped
  • 1 can baby corn, chopped
  •  1 pkg. grated Parmesan cheese
  • salt and pepper to taste

Mix all of the above together and then prepare the dressing:

  • 2/3 c. wine vinegar
  • 1/3 c. vegetable oil
  • 1/2 c. sugar

Mix together and pour over mixture. Refrigerate overnight.

Corn Okra Gumbo (MaMaw Shirley)

*This might not be extremely healthy, but I HAD to share. It is one of my favorites! So, so good. Loved the way her kitchen would smell. <3

  • 2 Tbsp. margarine
  • 1 med. onion, chopped
  • 2 Tbsp. green pepper, chopped
  • 1 lb. okra, sliced
  • 1 1/2 c. water
  • 1 can Del Monte diced roasted garlic tomatoes
  • 1 pkg. frozen whole kernel corn
  • 1 splash of Tobasco sauce (unless you want more)
  • salt and pepper to taste

In a large skillet, melt margarine and saute onion and pepper until tender. Add okra, water, and tomatoes; cook covered on medium heat for 15 minutes. Add more water if needed as cooking progresses. Stir in corn and Tobasco; continue to cook on simmer for 15 minutes. Salt and pepper to taste; then cook uncovered for another 15 minutes.
