Warmth in a Bowl: Delicious Soup Recipes That Are Perfect For Winter

The holiday season might be over, but we still have a few months of Winter. I don’t know about you, but I love a good heaping bowl of soup with some great toppings like shredded cheese, sour cream, avocados, cornbread, or tortilla chips. I crave soup year around, but it is especially yummy during the cold Winter months. I want to share with you a few of my favorite go-to (family) soup recipes.

My Personal Recipes <3

White Chili

  • 1-2 lbs. ground turkey, ground chicken, or shredded chicken (all are good, depends on what I have at the time or what sounds good!)
  • 4 cans navy beans
  • 1 (7 oz.) can chilies
  • 1 Tbsp. pepper
  • 1tsp. salt
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1 Tbsp. dried oregano
  • 1 Tbsp. cumin
  • 1/2 tsp. ground cloves
  • 2 Tbsp. olive oil

Saute chopped onion and garlic in 2 Tbsp. oil. Put in ground turkey, and cook until almost done. Add the other ingredients and simmer for 1 hour.

Line serving bowl with tortillas. Spoon chili on top and cover with cheese, salsa, sour cream, and guacamole.

Chicken Tortilla Soup

  • 1 large onion, chopped
  • 4-6 garlic cloves, minced
  • 2 Tbsp. cilantro
  • 3 Tbsp. vegetable oil
  • 2 cups chopped cooked chicken
  • 2 qt. chicken broth
  • 1 can stewed tomatoes (undrained), chopped
  • 1 can diced tomatoes with green chilies
  • 1 Tbsp. cumin
  • 1 bay leaf
  • 1/2 tsp. pepper
  • 4-8 corn tortillas, cut into 1/4 inch strips
  • 1/2 cup vegetable oil
  • 2 cups shredded cheese
  • avocado slices (optional, but highly recommended) 🙂

Saute onion, garlic, and cilantro in the 3 Tbsp. oil. Add chopped chicken and the next 6 ingredients. Bring mixture to a boil; reduce heat and simmer 30 minutes. Discard bay leaf.

Fry tortilla strips in 1/2 cup hot oil in a large skillet until crisp. Drain on paper towels. Sprinkle fried strips and cheese over each serving. Top with avocado and sour cream.

Easy Chicken Noodle Soup With A Twist

  • 1 can cream of chicken
  • 1 can cream of mushroom
  • 4 cans chicken broth
  • 5 (or more) chicken tenders or 2 to 3 chicken breasts
  • 1 chopped onion
  • 1 can Ro-Tel tomatoes
  • No-Yolk Noodles
  • 1 lb. Velveeta Cheese

Put first 5 ingredients in slow cooker and cook for 5 or 6 hours, stirring occasionally or cook on stove very slowly.

That evening, add Ro-Tel tomatoes. After cutting up chicken in the pot, add cooked noodles to the desired amount, then add Velveeta cheese and heat until cheese is melted. Serve hot.

Minestrone Soup

  • 1 large onion, chopped
  • 2/3 cups barley
  • 1 cup carrots, chopped
  • 1 bay leaf
  • 1 cup celery, chopped
  • 1 (16 oz.) can red kidney beans
  • Clove garlic, chopped fine
  • 1 (16 oz.) can green beans
  • 2 Tbsp. Canola oil
  • 2 medium zucchinis, chopped
  • 2 cans beef broth
  • 1 Tbsp. pepper
  • 3 beef bouillon cubes
  • 1 tsp. salt
  • 1 (28 oz) can chopped tomatoes
  • Parmesan cheese
  • 1 (15 oz.) can tomato sauce

Saute onion, carrots, celery, and garlic in oil until tender. Put all ingredients, except Parmesan cheese in a crock-pot. Cook 6 to 8 hours. Ladle into bowls and sprinkle with Parmesan cheese.

Green Chili Stew

  • 4 lbs. lean pork stew meat, cubed
  • 2 Tbsp. (heaping) flour
  • 3-4 large potatoes- peeled and cubed
  • 2 small cans chopped green chilies
  • 3-4 cloves garlic, minced
  • 1 onion, chopped
  • 4-6 cups chicken broth
  • salt and pepper to taste
  • ground cumin to taste

Brown meat. Saute onions and garlic in meat drippings. Drain and leave just enough oil to lightly brown the flour. Transfer to large pan and add meat and other ingredients. Simmer until potatoes are done. Sprinkle cheddar cheese on top and serve with warm flour tortillas.

  1. Oh my. I love soup. But since I left the east coast and moved to the south haven’t had much of a need. This is a great list of recipes. Thank you.

    • Yes. I’m from Texas and it doesn’t get really cold. Lol. But I still love soup! Hahaha! Just turn the AC down real low and pretend. 😂 where are you at now?
